So, I was wondering if you had any QUICK (because I can't stand standing in the kitchen for more than 30/45 minutes) and HEALTHY meal recipes. Please feel free to share them with me! I'm desperate, because I am in the rut of cooking the same thing every week and I know the hubby and the Breester are getting pretty tired of that. In fact, the hubby asked me the other day if I would be interested in taking some cooking classes, and that was on a night we had spaghetti!
Here is a Stuffed Portabello Mushroom recipe I found. I'm definitely gonna cook this up, but I wanted to share it with you too. Sounds delicious & it's only 233 calories!
Spinach Stuffed Portabello Mushrooms
Ingredients
- 4 large portabello mushrooms
- 1/4 cup chopped onion
- 2 eggs lightly beaten
- 1/2 Reduced fat sour cream
- 1 package (10 ounces) frozen chopped spinach, thawed & squeezed dry
- 1 cup crushed seasoned stuffing
- 1/2 cup crumbled feta cheese
- 1/2 tsp. of garlic salt
- 3 tbl. grated parmesan cheese
What to do:
- Line a baking sheet with heavy duty foil; coat the foil with nonstick cooking spray and set aside. Remove stems from mushrooms; set caps aside and chop steams. In a microwave safe bowl, combine chopped mushrooms, and onion. cover and microwave at 50% power for 1 to 2 minutes, stirring every 30 seconds.
- In a small bowl, combine eggs & sour cream. Stir in the spinach, stuffing, feta cheese, garlic salt, and onion mixture. Spoon into mushroom caps. Place on baking sheets.
- Back at 350 degrees fro 35 minutes. sprinkle with parmesan cheese. Back 5 to 10 minutes longer or until mushrooms are tender and cheese is melted.
That sounds pretty darn good to me. Slap a salad, and a piece of bread on a plate...and you have a meal! So, give me your recipe suggestions. I'm only interested in healthy ones, and preferably quick prep/cook time. Remember, I refuse to get fat again :)
On a side note, I'm having to wear my glasses until tomorrow afternoon. They're driving me crazy. I want my contacts back!

I have been eating very badly too. We've eaten out 4 lunches this week. Not only is that totally not healthy, but it's not healthy on my bank account either!
I did start the Shred and I'm on day 6. The only problem is, the more I exercise, the more I let myself eat!
I guess with Summer winding down, we give ourselves permission to not eat so good. I haven't gained any weight, but I'm on the road to doing so & that scares me.
What is Shred? But I do feel fatter when I exercise than I do when I'm not exercising. I hate that.
I really love Vegetarian Gyros and Southwest Salad (the recipes for which are actually up on my BlogFrog community...I'd love it if you'd stop by and post this recipe on there :) ). They're easy, quick, don't involve a lot of cooking (or any for they Gyro) and healthy.
I do agree that it's easier to let yourself go toward winter...when we can all cover up....LoL.

I've been meaning to go check out the BlogFrog community. But you know how it is with a 2 year old, you'd forget your head if it weren't screwed on (and I still question that it is sometimes). I'll go and visit though, and post my recipe :) I hate cooking, and worse, I hate cooking for long periods of time. So I definitely LOVE quick, healthy, and EASY recipes!
Another reason why I hate Winter. I get fatter. I love Summer time and flip flops! :)

You can definitely do the award by uploading it to any image host (I personally like www.imageshack.com) and then copying the code portion that says "html". Or, since it doesn't need to be linked to anything, you can just upload it to your computer, then choose a "picture" widget and put it in your sidebar.
